Let's dispel a myth...

We want to dispel the myth that ‘everything that tastes good is bad for you’ and that the quality of a dish ‘is entirely dependent on the skill of the chef’.

We take great care in sourcing organic raw ingredients that have managed to retain their authentic composition and taste. We do this to bring delicious flavours to your senses with products that are unadulterated by chemical or genetically modified substances.

Fruit and vegetables
We meet all our needs with certified organic products.

Cheeses
Our cheeses come from local farms that do not use GMO feed. Only certified organic Parmigiano Reggiano cheese is used.

Meat
The beef is exclusively from certified organic Chianina beef and organic Angus beef, the pork is exclusively from Black Swine bred in the Aboca woods and is organically certified. The ham is the local Suino Nero dei Nebrodi breed. The poultry comes exclusively from organic farms. Other meat and game come only from local farms without the use of GMO feed, or from our forests.

Table salt
Only that deposited by the seas some 250 million years ago in the foothills of the Himalayas is used. This salt is unique because it provides the same savoury flavour with about half the sodium chloride, thanks to its content of other health-beneficial mineral salts.

Sugar and sweeteners
Only natural organic products such as brown sugar and honey are used.
